You heard it hear first folks, egg rolls are going to BLOW UP.
I found a recipe for some southwestern egg rolls (yes, on Pinterest. #mormongirls) and I made them for our family New Years Eve party. SO good, SO easy. This recipe had corn, beans, cilantro, peppers, chilies, cheese, and some steak. Then we just wrapped them up in egg roll wraps--you can find them at any grocery store (except on New Years Eve...)--and BAKED them for 15 mins. Dipped in homemade guac or avo ranch. Crispy, delicious, not messy, and they don't leave you feeling heavy. Perfection.
The Southwestern Egg Rolls recipe can be found here. The recipe didn't call for steak but my dad and I thought it'd be better that way so we added some stripped steak in there too. Next time I'm gonna add in some avocado slices as well. YUM.
But this whole egg roll thing has got me thinking. Imagine a world where the egg roll was not oppressed by it's asian roots. Imagine what you can do! Anything you can dream up to roll together. The wraps come in a pack of 21 and are in the produce section of the store. Think about it. Steak and gorgonzola cheese egg rolls mmmm. Apple pie egg rolls. Enchilada egg rolls. Oooo potato egg rolls with bacon and cheese! Pulled pork rolls dipped in bbq sauce. Make little ham and cheese ones for the kids then dip them in honey mustard. Pizza bites galore. OH MY GOSH bananas foster egg rolls with vanilla ice cream (stank face). SERIOUSLY PEOPLE THIS IS REVOLUTIONARY.
As for directions for the rest of the egg roll creations I'd imagine (NOT saying this works--purely hypothetical here) that you could just follow the directions for the Southwestern egg rolls (below) with your own ingredients.
DIRECTIONS:
1. In a large bowl, combine everything but the egg roll wrappers. Place 1/4 cup mixture in the center of one egg roll wrapper. Fold bottom corner over filling. Fold sides toward center over filling and continue to roll tightly to seal (see directions on egg roll wrapper). Using your finger, moisten remaining corner with egg. Repeat.
2. Place seam-side down on a baking sheet coated with cooking spray. Brush tops of egg rolls lightly with olive oil or egg. Bake at 425 degrees F for 10-15 minutes* until lightly brown. Turn them halfway through baking.
*I did 7 mins on each side and they came out great
